1 small diced tomato
1⁄4 red onion diced
1 clove garlic chopped
2 tablespoons freshly squeezed lemon juice
1⁄4 teaspoon salt
Mash avocado with a fork, then mix in other remaining ingredients.
Great as a dip, on top of a salad, with eggs or Mexi Bowl.
